Bake, of course.
Yesterday, I stayed home.
Hurricane Isaac threw a kink in our plans for the week. We were supposed to head to Denver yesterday, but due to unforeseen circumstances, and then a hurricane showing up, we obviously needed to stay a day or two.
Of course, I couldn’t leave my children, my dog, and my home the day a hurricane is supposed to hit.
On top of that, La Petite Belle “threw up” at school yesterday morning and I had to go get her. The quotes are there due to the fact that if she even gags a bit or spits, she thinks she’s “thrown up.” This child has a great throw-up record or should I say non-throw-up record. In almost 12 years, she has thrown up twice. She doesn’t often get sick at all.
Needless to say, after an hour or two at home, she was back to normal. I even busted her dancing around in the living room. Yeah. She promises me she did “throw up.” 
But just in case we have any future issues with her calling me saying she’s “sick,” I gave stipulations as to when she should call me if she thought she were sick: Lying on the floor dying or bleeding to death. That’s it. Otherwise, go back to class. And, as a precautionary measure I made her memorize Proverbs 12:22 – “The Lord detests lying lips, but he delights in those who tell the truth.” Now. Done with that.
So, yeah … I was home. I felt like a real housewife. It was quite nice. I cleaned house. Did laundry. And, I cooked a full meal with dessert. By full meal, I mean pork roast, rice and gravy, and corn. For dessert, I decided I needed to do something with our overripe bananas. Instead of the typical banana bread, which I usually make, I opted for something that would include an icing. Peanut butter icing was my first thought until I remembered I had Biscoff in the pantry. Bingo!
Banana Cake with Biscoff Buttercream Icing

3 c. flour
1 1/2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 sticks butter, melted
4 ripe bananas, mashed
4 large eggs
1 tsp. vanilla extract
Preheat oven to 350 degrees. Combine dry ingredients. Add butter, bananas, eggs, and vanilla and mix. Bake 35-45 minutes until toothpick inserted comes out clean. Let cool.
Icing:
1 stick butter, softened
2/3 c. Biscoff
2 c. powdered sugar
Splashes of milk
Beat butter and Biscoff. Add powdered sugar slowly and splashes of milk to desired thickness. Spread over cooled cake.
