This week Beau and I, plus the kiddos, are all on a week’s staycation.
I LOVE staycations. Now, don’t get me wrong … I also LOVE vacations.
But, the great things about staycations are that you don’t spend nearly as much money as you do on a vacation and you get to sleep in your own bed with your own pillow (which, at my age, becomes more and more important … go figure).
The one downside to staycations is that you end up working and cleaning. But, I have made great effort to NOT do much work at all, as you can see from this rundown of my days thus far:
Wake up naturally (Yay! No alarm!)
Eat a full breakfast
Put a load of laundry on
Sit on the couch
Watch Netflix
Lunch
More laundry
Debate on whether I’ll be able to take a nap
Try to take a nap
More laundry
Slowly put out Christmas decorations
Maybe add in some type of exercise (started Jillian’s “30-Day Shred” again for “fun”)
Dinner
Bath
More Netflix until late into the night
Bed
Yep. True example of a great staycation.
Staycations involve staying in pajamas all day and that’s really what I’d like to do every single day this week. But, alas, there is Thanksgiving, which will unfortunately require clothes other than pajamas.
Here’s the nifty little recipe I tried this week in honor of Thanksgiving and fall and pumpkins. We enjoyed it our first day of staycation. Yummy!
Pumpkin Pie French Toast
2 eggs
1/4 cup milk
1/4 cup pumpkin
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
2 tablespoons brown sugar
8 slices bread (I used a nice, hearty wheat bread)

Beat eggs and milk in a shallow bowl. Stir in pumpkin, brown sugar, and spices until well combined. Make sure there are no clumps of pumpkin left. Spray griddle with non stick spray. Dip bread into egg mixture, turning to coat each side, and allowing excess to drip off back into bowl. Cook over medium-low heat, about 2 minutes for each side of bread. Serve with syrup.

(I cooked the toast on a higher heat because I like a crispier French toast. And, a heartier bread is a must or the bread will fall apart.)
Now, let me get back to the couch and season 2 of “Parenthood”.
